Before we get started, let’s talk about cheese.

Cheese is an ancient food whose origins predate thousands of years of recorded history. It is not known where cheesemaking originated whether in the Middle East, Europe or Central Asia but one thing is for certain that the practice did spread within Europe way before Roman times and according to Pliny the Elder. Cheesemaking became a very sophisticated and prosperous enterprise by the time the Roman Empire came into power.

According to scholars and historians, the earliest proposed dates for the origin of cheesemaking range from around 8000 BCE. This is about the same time when it is believed that sheep were first domesticated. Since ancient times, humans have used animal skins and inflated internal organs to store food. It is thought that this process of cheesemaking was discovered accidentally by storing milk in a container made from internal organs such as the stomach of an animal.

What happened was the milk would be turned into curd and whey by rennet which are enzymes produced inside the stomachs of ruminant mammals. There is an ancient legend that says the discovery of cheese was by an Arab trader who used this very method for storing his milk. The earliest archaeological evidence of cheesemaking goes all the way back to 5500 BCE and is found in what is now Kujawy, Poland. This is where archaeologists discovered strainers that were coated with milk-fat molecules.

Here’s a fun fact about cheese I bet you didn’t know. The world’s oldest cheese, which dates back to approximately 3200 years before present day, was found in an ancient Egyptian tomb. I don’t know about you but I think I’ll pass on that piece of cheese. I know the Egyptians perfected to practice of mummification but I’m not sure how good they were at preserving cheese. With that being said, preserving cheese has always been a priority throughout time.

The best way to preserve your cheese is by covering it with wax. The wax will protect your cheese from mold and bacteria for long periods of time. This process also keeps your cheese moisturized and will drastically reduce the time you need to spend working on it. You are about to discover that waxing cheese is the easiest and best thing you can do to take your love for aging and making cheese at home to the next level. Alright, let’s get started!


Here’s Everything You’ll Need:

  • Cheese (Ideally, permit the cheese to produce a bare, yellowish coating by being left unsealed on a stand in a cool area for some weeks.)
  • Beeswax
  • Honey to give the cheese an interesting taste. For 7 oz of cheese, I used a teaspoon of honey. (optional)

Melting the Wax

Melting the wax is just as easy as melting any other kind of material. All you’ll need is a heat source and a pot (make sure you use an old pot because cleaning it will prove to be an impossible task).

Warning: Use extreme caution because molten wax is flammable! Make sure that you check it regularly and never leave it unattended during the melting process. This is extremely important so make sure to be very, very careful.

Adding the Honey (Optional)

Right after your resin has completely melted, you need to take it off the stove and add your honey. Go ahead and stir the mixture for about five minutes so your honey completely dissolves and incorporates into the wax. The next step is to leave it be for another five minutes to cool down enough so you can handle it. You can speed this process up by stirring it up a bit.

Brushing the Cheese/Dipping the Cheese

Before you start doing anything else, you need to choose the method you are going to use. The first method is brushing the wax on your cheese. This method will result in a more even wax application on your cheese. This method will also require a less wax because you’ll only need as much as the brush’s length to be dipped in.

Or you can just dip your cheese which I think is the best method because it kills off any remaining mold spores that may still be on the cheese while preventing any further mold from growing. Another advantage to dipping your cheese is that you won’t have any additional cleanup with a brush but you will need to be very careful with the heated wax because it can burn you.

So go ahead and dip your cheese into the wax and leave it there for about three seconds and then rotate your cheese to the other side.

After you’ve done that, go ahead and take the initial portion of cheese and cover the end that’s unwaxed. Always remember that one light coat of wax is better than a dense layer. Make sure you let the wax solidify on the cheese before you repeat the same process with other parts of the cheese. Make sure that you fill any air scopes to inhibit mold germination.

You should be doing this with your bare hands even though there is a risk of being burned. Your bare hands will give you a much better grip especiallly when you start rotating the cheese. Just repeat the above process to join the second layer of wax to every part of your cheese.

That wasn’t so bad, was it. And there you go the finished product is done. Go ahead and place it onto two glasses so it can dry faster. These glasses are necessary if you decide to brush your wax on. This will give you much better reach over the entire cheese. It is strongly recommended that you place something underneath the glasses. Aluminum foil works best! This stuff will make a mess so be careful.

After that, he went ahead did the same thing with a round cheese. Then he dipped it into the wax and slowly turned it around so he could get the entire circle. If you’re going to do multiple pieces of cheese, you might need to put wax back onto your stove for a few seconds. This will keep your wax hot enough so you can dip your next piece of cheese.

After you’re done with this piece, go ahead and place it onto the glass and let it sit there for a few seconds. It will cool off very quickly so you don’t have to wait for very long.

You should have plenty of wax left over so the next thing you want to do is collect all of your excess wax. You can store your left over wax for later use.

Once you start eating your delicious homemade waxed cheese, you can seal the remaining cheese by melting your left over wax.

As you have just learned today, cheese waxing is a quick and easy way to protect your cheese from anything that can slow down or stop the process of aging it. This entire process takes approximately two hours to complete but as you can see it’s well worth the time spent. This process will allow your cheese to age beautifully and most important, safely as well.

Essential Reminders

  • Should you happen to find any holes in your cheese later, all you have to do is go back and add some more of your left over heated wax to those points.
  • The wax that you’ve already used is always reusable. This is a great thing to know because after you eat your cheese. You can learn how to preserve the wax and reuse it at a later time.
  • If you ever remove your cheese from the wax and see spots of mold. It is probably because the wax fractured and air leaked inside. Just simply chop off the ruined area and enjoy the remainder of your cheese. Even though you may have found a little mold. Your cheese will always taste exquisite.
  • Your cheese is going to age over a season, so do not be alarmed when your cheese tastes strange after saving it for an extended period of time. It’s going to taste even better! GUARANTEED!
  • You also have the option of pre-covering your cheese with a cheese cloth. You may find it difficult to use the already waxed cheese later since it will probably be difficult to tear off a single sheet of cheese cloth. It is recommend to put the wax on the cheese that is not being utilized. This will seal up the open end of your cheese using the wax that you should have left repeating the same process over again. Now it will be perfectly preserved until the next time you get the uncontrollable urge to have a delicious piece of cheese.
